Most of the time I cook; I just add many random ingredients and hope for the best. A lot of the time, it is a failure.
This recipe is the result of an after ankle surgery, lazy, hungry, not wanting to cook anything time. I just add random ingredient that sounded good at the time. I placed the bowl in the microwave and hoped for the best, because I did not want to have to make something else.
Guess what! It turned out, in my opinion, like lasagna! This recipes ingredient may sound strange, but it actually tastes good.
It has the classic ingredients of lasagna including, spaghetti sauce and cheese. However, instead of lasagna noodles, it uses a whole-wheat tortilla cut into strips.
It is delicious and it only takes a few minutes to make. And I am guessing that you already have the ingredients in your house. You can add veggies like spinach, shredded carrots, or mushrooms.
Ingredients:
- 2 eggs
- 1/2 cup no sugared add spaghetti sauce
- 1 piece low-fat cheese (I used Swiss)
- 1 whole-wheat tortilla
Directions:
Crack the eggs is a microwave safe bowl and whisk until broken. Mix in the spaghetti sauce. Cut the cheese and tortilla in small strips and add to the other ingredients. Microwave for five minutes or until thoroughly cooked. ENJOY! (But be very careful and it is super-hot right out of the microwave!! I learned my lesson)
